WORLD CRUISE MENU FOR OCTOBER
THE CARIBBEAN SEA MENU
We will be "in Port" each evening
from 6:30pm
from Wednesday to Friday
each  full week of the Month

STARTERS
Spiced Corn Fritters (USA)
Pan fried sweetcorn fritters spiced with paprika & cayenne pepper served with lime wedges sour cream
Reggae Wraps  (Jamaica)
Highly spiced shredded chicken breast with sliced onion, peppers & diced tomato in a flatbread
Black Bean Soup (Caribbean)
Indigenous to the Caribbean is this soup of beans, onion, peppers, tomato
& coconut milk seasoned with thyme, cumin & ginger
MAINS
Oxtails & Butter Beans (Cuba)
A peasant dish of slow cooked oxtails flavoured with garlic, cloves, thyme, bay leaves & allspice in a tomato sauce
Jerk Chicken (Jamaica)
Jerk seasoning is a spicy, sweet, tangy and HOT seasoning for grilled meat, in ours we will be using our own grown hot peppers
Barbadian Style Flying Fish
First tried this as a sarnie in a rum shack somewhere in Bridgetown “rum shack” will probably give you a clue as to why I can’t remember exactly where
As there’s not many flying fish around here we’re using mackerel the closest alternative that I can think of, marinated in lime, coated in Bajan seasoning & breadcrumbs then fried

A pineapple topped baked sponge, served with Malibu custard
